The fish finger sandwich is an institution in its own right. Everyone seems to have their own opinion as to what the perfect fish finger sandwich should be (as do we!).

However, there are a few things that resound from everyone’s version of the humble fish finger sandwich – nostalgia, comfort food, reminiscing about the days growing up, familiarity and simplicity.

Please support British fish and seafood, and buy locally as possible. Look out for suppliers that promote sustainable fishing methods – also keep an eye out for MSC approved stocks when you are buying your fish.

The recipe below is our stairway to fish finger sandwich heaven. The cod can be substituted or replaced with other fillets of white fish, such as Haddock, Pollock, Plaice or Hake if you like.

The sandwich is made using 2 Fingers Original Chunky Tartare Sauce which provides the correct balance of piquancy and sharpness to cut through the fish fingers.

Ingredients:

140g Cod Loin – skinned, pinned & boned

50g Panko breadcrumbs

1 Free Range Egg – beaten, with a splash of milk

4 Tbsp. Flour – seasoned with salt & pepper for dusting

1 Sprig Fresh Dill Leaves – finely chopped

2 Slices Farmhouse Bread – thick sliced

1 Tbsp. 2 Fingers Original Chunky Tartare Sauce

½ Lemon Zest – grated

50g Mixed Leaf Lettuce

Salt & pepper to season

Method:

1)  Pat the cod loin dry of any excess moisture with paper towel, portion into 3 to 4 substantial fish fingers.

2)  Combine the Panko crumbs, lemon zest and dill leaves.

3)  Dust each fish finger in seasoned flour, dip in egg wash (beaten eggs), and cover with Panko breadcrumbs.

4)  Deep fry the fish fingers at 180ºC for 5 to 7 minutes, until golden brown. Drain on paper towel and lightly salt.

5) Spread the butter on both slices of the bread. To build the sandwich – start by adding fish fingers topped with mixed leaf salad followed by 2 Fingers Original Chunky Tartare Sauce.

6) Cut the sandwich and serve immediately.
